Ingredients
- 1 artisan flatbread
 - 1 tbsp. olive oil
 - 1 tsp. salt
 - 2-4 tbsp. apricot jam
 - 4 oz. plain goat cheese
 - 1 cup fresh blueberries
 - 2 tbsp. honey
 - 1/2 cup fresh mint leaves
 
Directions
- Preheat oven to 375°F.
 - Spread the apricot jam across the flatbread evenly.
 - Add crumbled pieces of goat cheese.
 - Add a layer of blueberries.
 - Brush crust with olive oil.
 - Bake for 8-10 minutes.
 - Drizzle honey, top with fresh mint, and add salt.
